Andhra Special Recipe-Snake Gourd With Sesame Seed Powder Masala

The Snake Gourd recipe is one of the traditional recipes of Andhra Pradesh which is loved by all others who ever tasted it.

I am going to share my recipe which I prepare it often at my home.

Standing Time: 20 min

Main Ingredient: Snake Gourd

Ingredients:

1 large Snake Gourd

2 tbsp Oil

½ tsp Turmeric

1 tsp Chana dal 

1 tsp Urad dal

1 tsp Cumin seeds

1 tsp Mustard seeds

2 to 3 Dried Red chilly

Few Curry leaves

Pinch of Hing (optional)

Salt for taste

½ cup Gun powder

Ingredients for Gun powder

½ Cup Sesame seeds

8 Red Chilly dried

2 Garlic cloves

½ tsp Cumin seeds

Directions:

Preparation of Gun powder:

Take a pan, put little oil in it and fry the red chilly. After the red chilly is fried, take out them and keep aside. Now, in the same pan shallow fry the sesame seeds in low flame until they are slightly gold in colour. Let them cool for a while.

Now take Garlic cloves, cumin seeds, fried red chilly, and sesame seeds and make them into a fine powder using your mixer.

Main Preparation:

1.      Slit open the snake gourd & remove the seeds. Cut it into small pieces.

2.      Boil the snake gourd with pinch of salt till it is tender and cooked. Remove the excess of water in it and keep a side.

3.      Take a non stick pan and put some oil in it. When it is hot add chana dal, urad dal, cumin seeds, mustard seeds, red chillies, curry leaves, turmeric , hing (optional) and sauté all well.

4.      Now add the pre cooked snake gourd to the tempering in the pan. Toss it till the remaining water evaporates. Once it becomes a dry mixture add the gun powder to the mixture.

5.      Toss the mixture well. Add salt (if required).

6.      Serve it with Rice or Rotis.
